Some people find Brazilian Jiu-Jitsu and it changes their life. For Marco — head coach at Nostang Breizh'il JJB in Brittany, France — it found him right alongside another demanding craft: the kitchen.

A professional chef and BJJ black belt, Marco has spent years mastering two disciplines that have more in common than most people realize. Today, he runs one of France's most thoughtful BJJ academies — and he does it his way.

Two Worlds, One Mindset

"In the kitchen and on the mat, I learned the same things — discipline, repetition, and an obsession with detail."

That's how Marco describes the through-line between his two passions. Whether he's behind a stove or standing in front of his students, the approach is identical: you work the basics until they're second nature, you absorb pressure until it sharpens you, and eventually — if you stay patient — you develop your own style.

"Whether it's a dish or a match, it's a form of expression."

It's a perspective that shapes everything about the way he coaches. The tatami at Nostang isn't just a place to drill techniques. It's a space where the small details matter.

Putting Meaning Back Into Belt Promotions

One of the most distinctive things Marco has introduced at his academy is a written exam before belt promotions. Not a technique test. A BJJ history exam.

The idea came from a friend — Thiago Goiabeira — who did something similar at his own club. For Marco, the reasoning was clear.

"I saw students improving technically without knowing where the art came from or what it stood for. For me, that's essential. Understanding the roots of BJJ means respecting it more deeply — and teaching it better."

The questionnaire became a way of reminding students that a belt is more than a rank. It's a commitment to the lineage, the values, and the culture of the art.

Running a Club in Rural Brittany

Nostang is a small commune in southern Brittany. It's not Paris. It's not Lyon. Building a BJJ community there required something most people underestimate: pure determination.

"Being far from the big cities means you need even more motivation at the start," Marco admits.

As the club grew, so did the administrative load. Registrations, payments, follow-up messages — the kind of work that quietly eats into the hours you want to spend on the mat.

"I was spending so much energy on admin. Energy I would have rather put into coaching."

Something had to change.
